About the distillery

Baoilleach Distillery is located by Carrigart in Donegal, overlooking Mulroy Bay and The Wild Atlantic Way. It is one of Ireland’s smallest whiskey distilleries and operates from an old cottage on a hillside slope, where distillation is carried out in small batches with direct fire and small copper stills. The result is a compact, local whiskey history with a clear Donegal identity and a strong emphasis on craftsmanship and its own grains.

History

Baoilleach Distillery began producing spirits in late 2019, with work starting on poitín at a small pot still setup. Michael R O'Boyle runs the distillery solo as founder and head distiller, and from the start the goal has been to make small batches focused on quality and character. In early 2022, production expanded with another pot still, two 3,000-litre fermenters, and a larger mash tun. The first cask of Irish Whiskey arrived in June 2022. The following year came Grán na hÁite, the first whiskey made with local grains, and in 2024 the mash tun and production processes were upgraded, allowing the work to run more streamlined and flexibly.

Ingredients and production

Production is based on small batches and manual operation. The distillery uses direct fire and small copper stills, and works with a wide range of mash bills: malt barley, green barley, oats, rye, corn, and peated grains. Distillation is double, and it’s a small pot distilling approach with a clearly experimental take on the raw materials. In the Grán na hÁite part of production, 20–25% of the mash bill is malted on site, and the malt is made in small batches of 220–280 kg per week during the distillation period. The distillery also describes that it grows grain around the site and uses its own crops in some editions, so the origin of the raw materials becomes an active part of the process.

Maturation and cask types

Baoilleach works with a small but characteristic selection of casks. The first release was matured in Bourbon Quarter Casks and a Ruby Port Hogshead, while the Donegal Mountain Dew batch is a vatting across five casks, including Ruby Port, White Vermouth, Sherry, and Bourbon. Grán na hÁite is linked to Oloroso and Ruby Port casks in the documented release and cask-share editions. This gives an impression of how cask selection is actively used to build depth, fruit, and complexity into the small releases.

Whiskeys

The range is small and closely tied to the distillery’s own development. An Chéad is the first Irish Whiskey and shows the house in a powerful cask strength edition. The Donegal Mountain Dew batch combines multiple spirit types and casks in a more complex vatting. The Grán na hÁite series stands as the distillery’s local grain story, where harvest, fields, and cask all become part of the same whiskey. It’s a range that tells more about production and place than about mass volume, and that’s why each release appears as a small snapshot of the distillery’s work at a specific time.

Whiskey style and tasting profile

The overall style ranges from peated character to dark fruits and a full, soft profile. An Chéad is described as a double distilled peated mixed mash bill, while Donegal Mountain Dew offers a clearly peated element along with vibrant dark fruits and a soft, full-flavoured nose. At the same time, maturation in port, sherry, and bourbon casks points to a whiskey where fruit depth and a rounder fullness work together with a smoked edge.

Visit the distillery

The distillery runs a webshop and has a contact and shop section, but the public text does not describe fixed visitor experiences, guided tours, or tastings. What is clearly visible is the opportunity to buy directly through the shop and stay updated via the contact and news section. For visitors, this means that the distillery primarily appears as a small, active production address focused on sales and ongoing release information.
