History

ascaim – a fine distillery is a small artisanal distillery in the heart of Aschheim, not far from Munich. They have become known for their multi-award-winning Eschenblatt Gin, but they also produce much more.

Production / Manufacturing

Buckwheat Whisky is based on buckwheat grown in-house and distilled at low temperature. After distillation, the whisky matures in 200-liter virgin oak casks (called Hirschen). It is aged for at least 3 years in a semi-public storage facility and develops characteristic wood notes. The whisky is non-chill-filtered and has a natural colour. Finally, it is diluted with ultrafiltered Voralpen water to drinking strength. The bottle is 0.7 liters and 43% ABV. The product is an award-winning part of the ascaim range and has won Goldenes Stamperl in 2023 and a Gold Medal at Bayern Brand in 2024.

Their range includes non-chill-filtered / natural colour.
