History

West Cork Distillers was founded in 2003 by childhood friends John O’Connell, Ger McCarthy, and Denis McCarthy. They began modestly in a room behind Denis McCarthy’s house in Union Hall, where they worked with two small stills bought from a Swiss schnapps producer. The O’Connell family had a long, albeit illegal, distilling tradition, and the local poitín heritage from the Coolea Mountains in western Cork left a clear mark on the early days. In 2014, the company moved to a new distillery in Skibbereen, first on Market Street, and in 2020 it opened the facility on Marsh Road. Raw materials and production
