History

Foundation and vision

Walsh Whiskey was established in 1999 by Bernard and Rosemary Walsh. It is a family-owned company dedicated to reviving Irish whiskey as one of the world's most valued spirits. Their portfolio consists of the two core brands The Irishman and Writers’ Tears, based on timeless recipes from Ireland's Golden Era of whiskey distillation and refreshed for modern palates. They have achieved international recognition for their premium and super-premium whiskeys.

Walsh Whiskey describes itself as whiskey-makers with purpose and curiosity: to create, to experiment, and to challenge – with the motto 'Never Say Die'. The story is built around reconstructing traditional recipes from the 1800s – Ireland's Golden Era – and renewing them for modern taste experiences. The two core brands, Writers’ Tears and The Irishman, are recognized as premium and super-premium whiskeys. They introduced Irish whiskey's first cask-strength edition in the modern era in 2008, and they have built Ireland's largest manually operated distillery, which distills all three styles of Irish whiskey under one roof. They have also driven the development of cask finishes and innovative expressions as part of their quest for the perfect taoscán (dram).

Production and manufacture

Distillation and grain profile

Production is based on triple-distillation and a mash bill consisting of Irish barley. The Irishman is highlighted as a triple-distilled single malt, matured in first-fill Bourbon and in European Oloroso Sherry casks. Writers’ Tears is a unique blend of aged Single Pot Still and aged Single Malt Irish whiskey, triple-distilled and not-chill-filtered in several variants, aged in flame-charred American Oak bourbon casks. Many expressions show finishes in different casks – including PX Sherry, Marsala and Icewine.

Finish, distinctive traits and innovation

Expressions such as The Irishman Caribbean Cask Finish are finished in rum casks after an initial maturation in bourbon casks; Writers’ Tears – Copper Pot is a blend of Pot Still and Malt, aged in bourbon casks (flame-charred). Expressions such as Writers’ Tears – Japanese Cask use Mizunara oak (notes of exotic woods) and is naturally non-chill-filtered. Icewine Finish expression is finished in Inniskillin Icewine casks for 12 months, and Marsala Cask expression is finished in Marsala casks from Florio in Sicily. The Cask Strength editions emphasize higher ABV and non-chill-filtered profiles (e.g., 54.8% ABV for Cask Strength). These finishes and higher strengths illustrate their ongoing pursuit of new combinations and depth of flavor.
