Dingle Distillery is located in Dingle in County Kerry, all the way out on the Wild Atlantic Way, where the dramatic coastline and the town’s hospitality provide the backdrop for a small, independent Irish distillery. Here, handcrafted whiskey, gin, and vodka are produced with clear pride in the place itself. History

Dingle Distillery was founded in 2012 by Oliver Hughes, Liam LaHart, and Peter Mosley, who came from Ireland’s craft beer scene. Their ambition was to bring whiskey back to small-batch distillation and artisanal maturation. They chose Dingle because the location offers both nature, community, and a strong local identity. That same year, the distillery began distilling, and since then it has developed into a prominent independent name working across multiple spirit categories. In the story, the town, the employees, and the local grounding play a major role: from distilling to maturation and bottling, each step is described as shaped by both the team’s dedication and Dingle’s spirit. It’s a business that has built its identity around authenticity, quality, and a conscious relationship to the place of origin, rather than volume and standardization.

Raw materials and production

The whiskey is distilled, matured, and bottled at Dingle Distillery. The spirit is triple distilled, and the production is described as handcrafted all the way through. The distillery works with three stills with a capacity of 3,000 liters each, and they run for 6 to 8 hours at a time. The team consists of 20 people, and production takes place seven days a week, with bottling on-site. An important part of the work is the traditional wooden mash tun, which is used for both single malt and single pot still. Single malt is made from locally sourced malted barley, while single pot still is made from locally sourced malted and unmalted barley. The tours show guests the path through mashing, fermentation, distilling, and on to maturation—emphasizing that the processes are intended as a connected chain rather than separate steps.

Maturation and cask types

Maturation is closely tied to casks that carry both classic Irish whiskey tradition and more flexible combinations. Single malt is matured in Bourbon, Oloroso Sherry, and Pedro Ximénez Sherry casks, while 10 Years Old also uses Bourbon, Port, and Pedro Ximénez Sherry. Single Pot Still receives Bourbon, Oloroso Sherry, Pedro Ximénez Sherry, and Red Wine casks. The distillery highlights that the casks are filled by hand, and that the whiskey is allowed to rest until the team deems it ready—based on careful observation and sampling. This creates a maturation style where patience and practical assessment weigh more than fixed schedules.

Whiskeys

The whiskey range in Dingle Core Expressions is small, but clearly built around three core releases: a single malt, a 10-year-old single malt, and a single pot still. The single malt expresses the distillery’s more classic side with bourbon and sherry casks; the 10-year-old adds age and port casks; and single pot still shows the more textured Irish style with both malted and unmalted barley, plus a broader cask palette. Taken together, the series points to a distillery that works with a distinct identity and varied expressions—without losing its focus on craftsmanship and local grounding. In addition to whiskey, the distillery also produces gin and vodka, but the whiskey program is clearly anchored in the Core Expressions line.

Across the documented releases, a fresh citrus line comes through again and again, complemented by sherry-influenced fruit and a distinct coastal freshness. Dingle Gin is described as having a soft, balanced warmth from juniper, while the Orange & Sea Salt expression delivers clear orange aromas, floral notes, and a clean, salty finish. In the whiskey, the cask profile points toward bourbon, Oloroso, Pedro Ximénez, port, and red wine—together creating a style that can be read as both fruity and deep, shaped by the complexity of maturation.
