History

Dingle Distillery was established in 2012 and produces all its spirits locally in Dingle – from distillation to maturation and bottling. We are independent and handmade: our approach is shaped by tradition and the unique atmosphere of the coastal town of Dingle.

We have gained recognition for our products, particularly Dingle Gin which was named the world's best London Dry gin and the world's best gin in 2019, as well as awards for Dingle Vodka which is quintuple-distilled.

Production / Manufacturing

Dingle Distillery produces its products in small batches with water from our own well. Our distillery is dedicated to craft and authenticity. Our whiskey is matured in a blend of Bourbon, Oloroso, Pedro Ximénez Sherry and red wine casks, and the quantity and types of casks provide variation and character. Dingle Single Malt uses a Solera system where past and present flow together in harmony. Our gin is produced from traditional distillation methods, and we add herbs such as rowan berries from mountain ash trees, fuchsia, bog myrtle, hawthorn and heather to give a distinct Kerry landscape flavor. The elements macerate in the spirit for 24 hours and pass through a flavor bag during distillation. Dingle Vodka is quintuple-distilled, and described as one of the purest spirits, reflecting the environment around Dingle. The vodka is produced in small batches and distilled five times.

Products / Whisky Series

Dingle produces Irish Whisky, including Single Malt and Single Pot Still Irish Whisky. Among our products is a 10-year-old Single Malt, matured in a blend of Bourbon, Oloroso and Pedro Ximénez Sherry casks as well as Red Wine casks, and in a Solera system that provides harmony between past and present. Celtic Wheel Of The Year is a series of nine releases, where the first were aged in Bourbon casks and finished in different casks; the series honors both Celtic Wheel of the Year and Wren's Day. Examples (Grianstad an Gheimhridh, Grianstad an tSamhraidh, Lá an Dreoilín, Cónocht an Fómhair) constitute selected releases.
