History
Nine generations in the making and many more to come. Nobletons Distilling House is inspired by the family's long heritage in farming and distillation. Our history is anchored in generations of work and tradition.
In 1575 our family's connection to the land began through simple landholdings, which laid the foundation for our heritage. In 1824 our distilling heritage was anchored when Timothy Terrell transformed agricultural life into a craft within distillation. This completed an era of farm and distillery, which has since evolved through nine generations.
In 2016 the seeds of Nobletons were sown by Demetrius and his wife, and they set the venture in motion to build a distillery and a farm, which has grown since. We are an end-to-end distillery, handling the entire process from fermentation through distillation, maturation and bottling.
Production
Cultivation and Agriculture
Cultivation of the grains that are distilled in our house constitutes more than just farming; it is a harmonious interplay between our ancestors' agricultural traditions and the artistic transformation of these grains into the character of our spirits. Each grain carries the weight of generations and the earth's history in our products.
Distillation
Our handcrafted, welded copper stills, designed by our founder in collaboration with local craftsmen and welders, are inspired by Armagnac alembic designs and are made exclusively from forged American copper. The design functions as a conductor, drawing out nuanced flavors and depths from the mash and guiding them into our new spirit.
Fermentation and Cooking
Our approach to fermentation and grain cooking is based on time-honored traditions. We perform a careful process that begins with individually cooking each grain to preserve its character. The fermentation period lasts 48 days and reflects our heritage.
Maturation
Our whiskey aging process takes place in three stages: seven years in new oak, seven years in used oak barrels, and up to seven years in neutral wood barrels. Tradition is the foundation of our work, and we are still at the early stages of exploring and refining this practice. We regard the process as part of our heritage and ongoing learning.
