Raw Materials and Production
Nashoba works with a range of raw materials: single malt is made from 100% barley malt, rye whiskey is based on a 90% rye recipe, and vodka is produced from 100% apples. The gin recipe consists of ten botanicals (juniper, coriander, clove, nutmeg, lemon peel, orange peel, cinnamon, angelica root, herbs de Provence, and anise). Production equipment includes a 28-foot-tall continuous column still with about 20 perforated plates, as well as a 250-gallon pot still for post-distillation. For brewing and sugar production, the distillery uses a 16-barrel kettle and mash tun (about 496 gallons each) equipped with rakes and paddles, enabling rapid handling of large sugar batches. When making sugar mashes, Turbo yeast is used and fermented quickly (typically 48–60 hours to 13–15% ABV), after which the continuous column still effectively raises the alcohol to about 65% ABV, which can be refined further in the pot still for high purity.
Maturation and Barrel Types
The aging program encompasses both new American oak barrels and used wine barrels sourced from the distillery’s winery. Used winery barrels, including barrels that previously held Cab Franc from 2009, are used deliberately to add fruity and vinous nuances. There are also creative techniques such as reusing stave from the barrels as authentic closures for the bottles.
