History

Ko‘olau Distillery is a veteran-owned distillery in Hawaii, where they hand-bottle the finest spirits made in Hawai‘i using pure artesian water. The company describes itself as veteran-owned with clear standards aimed at giving everyone the best possible experience.

Production / Manufacturing

According to Hawaiian legend, the gods dwell in the ever-present mist where the Ko‘olau mountains meet the sky. The tropical rainfall filters through volcanic rock and becomes the pure artesian water used to create the legendary whiskey. Old Pali Road Whiskey is locally distilled, of high quality, and aged in the American whiskey tradition, hand-blended with the clean Hawaiian water. The distillery emphasizes craftsmanship and a balance between water and spirits to create a distinct edge on the American palate.

• Old Pali Road Whiskey — Light, fresh citrus and subtle floral notes, designed for the American palate and for those who want to be “on island time.”
• Old Pali Road Private Reserve Straight Bourbon — Straight Bourbon.
• Māhealani Moonshine — A tribute to moonshine; the word Māhealani refers to the fourth night in the lunar cycle and is presented as a favorable day for distilling.

In addition, other products in the lineup include KaLa Vodka and Tradewind Gin (and Barrel Aged Gin), which showcase the distillery's breadth of craft spirits: - KaLa Vodka — produced with Hawaiian artisanal water and golden corn; very smooth and clean in taste. - Tradewind Gin and Barrel Aged Gin — gin varieties that are part of the distillery's lineup.

Visit / Experiences

The distillery offers on-site tours and experiences with a Tasting Room and the option to purchase items directly in the shop. The tasting menu includes cocktails such as Hawaiian Hoki, Tradewind Gin & Tonic, Moonshine Refresher, Old Fashioned variants and other classics, as well as the option to substitute gin/whiskey in cocktails with barrel-aged gin. The Tasting Room hours are: Mon–Thu 12–19, Fri–Sat 12–21, Sun 12–19. Pau Hana events with live music and food booths are also held on Fridays and Saturdays.
