History
- The Likarish brothers, Robert and Jonathan, decided in 2011 to embark on distilling after traveling the country and learning from the industry’s best. They settled in Denison, Texas, and the distillery opened in 2014.
- The name Ironroot honors viticulturist and Denison-native T.V. Munson's robust "iron roots", which helped save the French wine industry. Munson's efforts made Denison and Cognac sister cities.
- The brothers drew inspiration from applying French distilling techniques, particularly élevage, to tame Texas's intense climate rather than imitate traditional flavor profiles.
- Marcia Likarish, known as the Mother of Texas Whiskey, later joined the operation and contributes to blending and excursions.
- The Likarish family mashes, ferments, distills, barrel-ages, and bottles on site in Denison. The spirits are made with high-quality heirloom corn and non-GMO corn from local farmers to capture the authentic taste of North Texas.
