History

Hinterhaus is named in honor of the hinterland at our doorstep—the vast Sierra Nevada wilderness, which for years has called to explorers and adventurers to this mountain range’s area. Our spirits are born under the long shadows and rustling needles of tall trees by fresh mountain water that flows just outside the door, before being bottled at our 4,000-foot elevation. We are proud to be family-owned, and we work with our neighbors to source local ingredients and barrels. Each spirit we produce reflects the pristine region we call home. Enjoy a taste of the Sierra with us, and we raise a dram for those who go their own way.

Production / Manufacturing

Our approach to production is deeply rooted in terroir and local collaboration. We focus on American single malt and choose equipment and methods that support this style. As part of our foundation, we knew from the start that we would make single malt—with local family farms, high-quality grain grown and floor-malted nearby, fresh Sierra Nevada water from the source, open fermentation to let our local flora and fauna contribute flavor, and aging at our elevation and climate, which contribute to a unique terroir in Hinterhaus American Single Malt.

Products / Whisky Series

• Discovery – American Single Malt Whiskey: Distilled from 100% Malted Barley. 46% ABV | 92 PROOF | 750ML. Produced in small batches; open fermentation and use of local Sierra Nevada water; aging at our elevation creates distinctive character. The result is an American single malt with a clear sense of place and provenance.
• Singularity – American Single Malt Whiskey: Distilled from 100% Malted Barley. ABV varies | 750ML. Naturally presented (non-chill filtered and no color added) and at cask strength.
• Calaveras Cask Finish Bourbon: A blend of straight bourbon whiskeys finished in Calaveras County wine barrels. 46% ABV | 92 PROOF | 750ML. Produced in small batches and not colored.
• Calaveras Cask Strength Single Barrel Reserve Bourbon: Straight bourbon whiskey finished in Calaveras County wine barrels. ABV varies | 750ML. Full-bodied, single-barrel with a wine-barrel finish; not colored.
• Trapper's Oath – Extra Aged Rye Whiskey: Straight rye whiskey finished in stout beer barrels. 49% ABV | 98 PROOF | 750ML. Not chill-filtered and no color added.

Our efforts and stories come from California, in the Arnold area, with Sierra Nevada as a backdrop. We have received attention and awards in the press and reviews, and our products are available via our online store and through partnerships (Find Near You). Our story is told through articles and award-winning spirits, which showcase our commitment to small batches and the region’s terroir.
