History
Founder Chris has a background in commercial poultry production and continued his commitment to agriculture through beekeeping. A single beehive grew into several, and the interest in processing raw Wisconsin honey led to the idea of distilling their own spirits. At the same time, Hatch has prioritized collaboration with local farmers to select heirloom varieties of corn and rye near Egg Harbor. Three specially selected barley varieties are the foundation for their Single Malt. The Hatch story is about connecting the place's ingredients, people and harvest with the craft in the distillery.
Raw materials and production
Production is based on local ingredients: heirloom varieties of corn and rye grown just a few kilometers from the distillery, as well as three carefully selected barley varieties for Single Malt. Beekeeping and the use of raw Wisconsin honey are an integrated part of the company's repertoire, and foraging contributes supplementary ingredients. Work is done in small batches with a focus on traditional techniques and close relationships with local suppliers to let the character of the ingredients come through in the finished product.
