History

Hali'imaile Distilling Company was founded by the LeVecke family, whose passion for premium spirits spans over 50 years. Eighteen years ago, this vision became a reality on the slopes of Haleakalā in Makawao, Maui.

Production and Manufacturing

The distillation reflects the unique Maui spirit. Maui Gold® pineapple forms the basis for our flagship drink PAU Maui Vodka, which offers a fresh, clean finish. All spirits are handmade using cutting-edge glass stills and innovative distillation methods. We recycle distillation by-products as agricultural feed and compost, and our approach is environmentally responsible.

Products / Spirits Collection

Our range includes PAU Maui Vodka, FID Street Gin and Mahina Premium Rum, as well as other spirits collections produced in Maui from locally sourced ingredients. PAU Maui Vodka centers around Maui Gold® pineapple and is characterized by a crisp, clean finish. Our products reflect Hawai'i’s culture and flavors, and are crafted with consideration for the land and the community. We also offer award-winning products in our assortment.

Tours and Tastings

Explore our distillery through guided tours and tastings. We offer tours Monday through Friday with starting prices from USD 17 per person. Group arrangements for weekend tours can be arranged upon request. A valid photo ID is required at the entry to the tasting room; guests under 21 are welcome, but during the tasting they must wait outside. Guests 21 and over may partake in three tastings during the tour. Credit cards are the only accepted form of payment.

Our approach focuses on sustainability and community: we use locally available Maui Gold® pineapple and recycle by-products to support agriculture. We emphasize Hawai'i’s natural beauty and culture for future generations.
