History
Griffin Claw Brewing Company began in 2010 in Birmingham, Michigan, near the Big Rock Chophouse, where they won World Beer Cup Awards, and since then they have built two production breweries and distribute beer across the state and beyond.
Production / Manufacturing
Griffin Claw has always taken an unconventional approach and decided to establish a distillation program to expand the offering. They distill whiskey and other spirits as part of the business. In terms of sustainability, they have implemented a Mash Filter, which was the first of its kind in the USA and increases efficiency and reduces waste. They also have a CO2 recapture system called Cici from Earthly Labs, which recirculates CO2 from fermentation and reuses it in the brewery. Tree Tracker shows how many trees' worth of CO2 they have recaptured. Spent grain is sent weekly to partner farms for feed.
Products / Whiskey Series
3 Scrooges Whiskey – a bourbon-inspired whiskey, 80 proof, aging about 5 years. It is made from corn, distiller's malt, rye, caramel malt and roasted wheat and aged in new charred oak barrels. According to the product text it is described as a bourbon and the age is 5 years. Blue Corn Whiskey – 111 proof, made from Arizona Heritage Blue Corn together with Cherrywood Smoked Malt and Distiller's Malt, and aged for at least 7 years in new charred barrels.
Visits / Experiences
Griffin Claw has two taprooms: Birmingham and Rochester Hills. The Birmingham Taproom is located in the Birmingham Rail District and offers a family-friendly atmosphere with indoor and outdoor seating, as well as house-made cocktails, beer, cider, seltzer and wine and food. The Rochester Hills Taproom & Production Brewery has over 30 taps and offers house-made spirits, hard cider and hard seltzer in a cozy clubhouse-like environment.
Philosophy
Griffin Claw produces a wide range of products, all brewed for inclusion. They promise that there is something to enjoy with friends, made with love and care. They place emphasis on sustainability through technologies such as Mash Filter and CO2 recapture, as well as the reuse of spent grain for agriculture. They work for the community through partnerships and events and support charitable causes through their initiatives.
