History
Grand Canyon Brewing + Distillery traces its roots to Williams, Arizona. In 2003, a U.S. Navy veteran named John Peasley returned to his childhood surroundings and bought White Horse Trading Post and Cruisers Route 66 Café. In 2007 he founded Grand Canyon Brewing Company to honor the Grand Canyon and the adventurous lifestyle in Williams. In 2017 the company expanded into distilling and established a grain-to-glass production with local ingredients and Arizona-grown grains. With expansions in Williams, Flagstaff, Page and Kingman, Grand Canyon Brewing + Distillery has created a rugged Western vibe with modern touches. Each location reflects the bold Western spirit and the opportunity to enjoy craft, while brewing and distilling meet in Northern Arizona.
Production/Manufacturing
Our approach combines tradition and innovation. We start with quality malt and hops and work with a grain-to-glass approach and scratch-made spirits. Since 2017 we have distilled locally and used Arizona-grown grains and ingredients. Production takes place on-site, and our taprooms offer a selection of spirits and ready-to-drink cocktails that reflect the craftsmanship and history. The locations showcase rugged Western character, with a focus on bringing brewing and distilling closer to visitors and outdoor experiences.
Products / Whisky Series
Grand Canyon Distillery produces whiskies based on American traditions and local grains. Examples include Bond Fire, Star Shine, Old Bill Rye, and Blue Corn Bourbon. There are also other whiskey products such as Cinnamon Fire Thunder Snow. Bond Fire is an American Single Malt Whisky smoked over applewood and aged in new American oak barrels for at least 24 months. Star Shine is an American Single Malt Whisky with notes of honey, pear, cloves and a cherry finish. Old Bill Rye is a Rye Whisky composed of 55% rye, 30% red wheat and 15% 2-row malt. Blue Corn Bourbon is a Straight Bourbon made with Arizona blue corn and Sonoran red wheat and aged at least 2 years in new barrels. Cinnamon Fire Thunder Snow starts as a base of unaged corn whiskey and adds habanero, vanilla and cinnamon sticks for depth of flavor. The products have received awards and recognition in American competitions.
Bond Fire
American Single Malt Whisky, 92 proof. Made from 100% malted barley and smoked over applewood. Aged in new American oak barrels for at least 24 months. Award-winning and recognized by American spirits organizations.
Star Shine
American Single Malt Whisky, 92 proof. Malted notes of honey, pear and cloves with a soft oak and a cherry finish. Award-winning in American competitions and noted with high ratings in Whisky Advocate.
Old Bill
Rye Whisky, 95 proof. Named after Bill Williams. Composition: 55% rye, 30% red wheat and 15% 2-row malt. Nose with soft oak and vanilla, palate with pronounced rye and vanilla.
Blue Corn Bourbon
Straight Bourbon, 80 proof. Aged at least 2 years in new American barrels. Produced with Arizona blue corn and Sonoran red wheat, providing a clean, nutty sweetness.
Cinnamon Fire Thunder Snow
Whiskey, 92 proof. Starting with a base of unaged corn whiskey and adding habanero, vanilla and cinnamon sticks for depth of flavor.

Our locations in Williams, Flagstaff, Page and Kingman unite a brewery, distillery and taprooms. Williams: Production facility & Brewpub with 16 taps of Grand Canyon beer and a full selection of spirits distilled on site, plus a family-friendly restaurant. Hours: Sun–Wed 11:00–20:30; Thu–Sat 11:00–21:00. We currently do not offer brewery tours.
Flagstaff: 23 taps, 5-barrel system, scratch kitchen and a full bar selection of spirits and taproom releases. Hours: Sun–Wed 11:00–20:30; Thu–Sat 11:00–21:00. Dog-friendly area.
Page: Large dining hall with 20 taps and central bar, where Grand Canyon spirits are used in cocktails. The Bohemian Monobloc system is on display. Hours: Sun–Wed 11:00–21:30; Thu–Sat 11:00–22:00.
Kingman: Located on historic Beale Street with multi-level dining and JV Northwestern & Barrel brewhouse. Hours: Sun–Wed 11:00–20:30; Thu–Sat 11:00–21:00.

Grand Canyon Distillery honors the bold, adventurous spirit of the Old West and is behind a grain-to-glass approach that blends tradition and innovation. We use local ingredients and Arizona-grown grains and achieve craft quality in both beer and spirits. Each location maintains Western charm with modern facilities, where guests can enjoy craft and camaraderie in connection with outdoor adventures and nature experiences.
