Gervasi and the Swaldo family

Gervasi Vineyard is a luxury winery and resort in Canton, Ohio. According to the site, the project was born around 2009 and 2010, driven by Ted Swaldo and his family, who later built a 55-acre estate with a winery, a distillery and three restaurants. The family has been part of the development and worked with their son Scott Swaldo and other family members.

The list of openings includes The Bistro and Marketplace (March 16, 2010); The Piazza and Pavilion (May 28, 2010); Villas and Villa Grande (November 1, 2011); The Crush House (October 2, 2013); The Twisted Olive (November 3, 2014); The Still House (December 12, 2018); Distillery (January 14, 2019); The Casa (May 2, 2019); The Cave (March 21, 2023); The Spa (April 11, 2023).

Present

Today, Gervasi is a destination with a winery, a distillery, three restaurants, a coffeehouse and a spa, along with luxurious accommodations and many events.

Production / Manufacturing

Distillery and spirits

The distillery produces spirits on-site in small batches, blending technical innovation with tradition. The spirits include wine-barrel-finished bourbon, rosé vodka and pink peppercorn gin. The products are sold at The Still House and The Marketplace.

Tastings and tours

Guided tours and tastings of Gervasi spirits are offered, including private distillery tours and a Bourbon Tasting Tour. Head distiller Shae Pridemore leads the tours and ends with a tasting of 3–4 samples. Private tours and group events are available.

The Still House and retail

The Still House combines coffee, cocktails and signature spirits, complemented by small bites and beverages from The Crush House.

Gervasi Spirits and signature releases

Spirits are produced on-site in small batches and range from wine-barrel-finished bourbon to rosé vodka and pink peppercorn gin. Winter White Whiskey is a limited release and offers warm notes of cinnamon, cloves and nutmeg.

Tours and tastings

Gervasi offers guided distillery tours and private distillery tours as well as the Bourbon Tasting Tour. The Cave offers wine tastings and a Barrel Room Tour.

Gervasi offers a range of dining experiences and experiences such as The Still House, The Bistro, The Crush House, The Piazza and The Twisted Olive, as well as a spa and accommodations such as The Villas and The Casa.

Community engagement

GV Destinations supports the local community and United Way of Greater Stark County through donations and partnerships. Each year they donate and raise funds for the local community since opening in 2010.
