History

Fish Hawk Spirits is Florida’s only medal-winning farm-to-bottle spirits distillery. They were founded in 2012 and are located in Ocala. According to the site, they are the fifth licensed distillery in Florida and produce a portfolio of 27 spirits, including whiskeys, vodkas and rums. They highlight their locally produced ingredients and processes – everything is produced on the farm outside Ocala.

Production / Manufacturing

  • The distillery operates on a farm in a shed with hand-built stills and various equipment.
  • They grow their own corn for whiskey and harvest fresh fruit from their own plantations and partners; herbs and botanicals are grown in raised gardens at the distillery.
  • They use Rainbow River water from a Rainbow River source and use it directly in the mash and later for blending; municipal water or RO is not used.
  • They distill and hand-bottle all bottles on-site; tours are offered on-site.
  • The production includes Sui Generis Whiskey (whiskey), Resurgence (rum), Island Grove (vodka), Absinthia (absinthe) and Colonial (brandy), for a total of 27 spirits.
  • Sui Generis Whiskey is the flagship, distilled on-site and aged in small batches; some of the variants include Conquistador 1513, Siren Song, Diaphanous Diamond, Silver Queen, Aurelian Axinite, Chamoisee Carnelian, Ecru Enstatite, and infused whiskies such as Split Charisma, Orchard Buzz, Fall of Man, Squanto’s Secret, Headless Horseman and Avant Garden.
  • Siren Song, Diaphanous Diamond, Silver Queen and the other Conquistador 1513 derivatives are based on corn spirit (Corn Whisky).

  • Resurgence Rum – Aquifer Queen Silver, 73 Degrees Gold, Rainbow River, La Septima, etc.; Island Grove Vodka – Island Grove; Absinthia – Absinthe; Colonial – Brandy.

Visits / Experiences

  • On-site distillery tours in Florida. Guided through the production steps, with tastings in the tiki bar.
  • Tour details: Thursday – Sunday at 3:30 PM, about 45 minutes, maximum 18 guests.
  • Price per person: 25 USD; 4–9 people: 10% discount; 10+ people: 20% discount. Private events also possible.
  • Opportunity to purchase bottles on-site.

Philosophy
