Production / Manufacturing

DorWood produces everything on-site and follows a strict selection of raw materials and artisanal processes. They distill everything on-site and use Hearts, while Heads and Tails are removed for a cleaner taste. Production-wise, several products and approaches are mentioned: - Vodka: distilled 5 times and filtered through coconut-shell charcoal 6 times for a clean and creamy mid-palate. - Agave Blanco (Tequila Blanco): made from 100% blue agave grown and handled in Jalisco, Mexico, fermented with wild yeasts and distilled three times. - Limoncello: based on Santa Barbara County wine, infused with lemon zest without bitterness from the pith, and with only a small amount of homemade simple syrup; 80 proof and not syrupy in taste. - White Hawk Malt Whiskey: made from 2-row and mesquite-smoked malted barley; the grain is malted and milled, mashed in a malt screen and boiled for 90 minutes, fermented and distilled three times; unaged and without wood influence, which gives a unique flavor profile with sweetness from barley and light smoke from mesquite. Described as an American Texas-Irish Scotch-whiskey-like style. - G7 Gin: starts with DorWood Vodka and adds 9 botanicals; distilled once more at lower proofs for a complex bloom of aromas. Notes include cardamom, coriander, cloves, cinnamon, orris root, lavender and citrus; suggested as a cocktail ingredient and can even be enjoyed warm as an herbal tea. - Habapeño Limoncello: infused with habanero and jalapeño for a spicy kick.

• White Hawk Malt Whiskey – $45: Malt whiskey made from 2-row and mesquite-smoked malted barley, unaged and without wood influence, distilled three times. Flavor notes include a light grain sweetness with a hint of mesquite smoke and a long, smooth finish. Recommended both neat and on the rocks, with pairings to BBQ, vegetables and cheese. Described as an American Texas-Irish Scotch-whiskey-like style.
