Historie
- In the 1990s, Jim began brewing beer and later developed fruit wine, grape cider, and dandelion wine. He participated in the WI State Fair Amateur Wine Making & Beer Competitions and won several prizes, which led to a desire to open a winery. In 2006, Duck Creek Vineyard & Winery was registered in Wisconsin.
- Around the Wisconsin Ledge area the region became an American Viticultural Area, and as a result the company relocated to Denmark, WI in September 2012. The shop opened as Duck Creek Vineyard & Winery on November 29, 2013.
- In 2015 they visited Northern Waters Distillery and met Peter Nomm; this inspired bourbon-barrel aging for their wines.
- In 2018 they added Denmark Distilling, and in 2021 New Denmark Brewing Company joined.
- The company philosophy is to deliver handcrafted, internationally award-winning wines, honey mead, Kombucha tea, spirits, moonshine and craft beer, and they invite visitors to their tasting room / taproom.
Produktion / Fremstilling
- Denmark Distilling is operated on-site and produces whiskey, vodka, gin, rum, brandy, aquavit, sorghum whiskey, corn whiskey and bourbon. Their three distillation units consist of a reflux column for vodka and gin, and two traditional pot-stills for bourbon, whiskey, brandy and rum. The pot-stills are like the old moonshine stills used in the woods.
- They age brandy, whiskey and rum in small casks for a minimum of 2 years. Mash Bill for 12Th Street Whiskey is 90% corn and 10% sorghum, aged in small oak barrels for 2 years.
- Their methods include production of many moonshine variants (distilled from corn or sugar) and a range of other cold drinks. They provide a rich history of moonshine in the area around County Road R.
- U-Vin is offered as an experience where customers can produce their own wine (about 28 bottles per kit) and receive label design and bottle labeling. The process includes juice preparation (about 45 minutes) and bottle/label finishing.

- Bourbon – General designation for their bourbon production, including Noble Synergy Bourbon.
- In addition they offer vodka, gin, rum, brandy as well as various moonshine flavors, aquavit and other spirits.
Besøg / Oplevelser
- Their tasting room is open Thursdays and Fridays from 12:00–18:00, Saturdays 12:00–17:00 and Sundays 12:00–16:00 (hours may change). Tastings are available in flights consisting of 4 pours (red and white wine, mead, fruit wines, spirits, moonshine and craft beer) and flights can be mixed and matched.
