Historie

Delaware Phoenix Distillery is a New York State farm distillery, producing small-batch absinthe in the Western Catskills. Each batch is produced in a copper pot still using traditional 19th-century methods and the finest botanicals grown in our garden. There are no flavor enhancers or artificial colors; the color is entirely natural and no chemical stabilizers are used.

Delaware Phoenix was founded in 2009 by Cheryl Lins and was named Distillery of the Year in 2010 by the NY Independent Spirits Competition. We grow our own botanicals and locally source or harvest all remaining ingredients (except fennel and anise). This practice supports the absinthe's traditional agricultural roots and our commitment to sustainable farming and craftsmanship. This tradition is celebrated by distilling, coloring, bottling and labeling by hand, so that every bottle of absinthe is made with care and quality.

Produktion / Fremstilling

All batches are produced in a copper pot still using traditional 19th-century methods and the finest botanicals grown in our garden. There are no flavor enhancers or artificial colors; the color is entirely natural and no chemical stabilizers are used. We cultivate our own botanicals and locally source or harvest the remaining ingredients (except fennel and anise). We also employ sustainable practices, including production using draft animals in the garden and that all coloring and bottling are done by hand.

Meadow of Love

68% vol. (136 proof), 375 ml and 750 ml bottles Meadow of Love is a delicate, floral aroma that evokes strolling through the garden on a cool afternoon. Light body, bright and crisp botanical notes that blend into the clear louche of licorice and anise, with a lingering finish.

Walton Waters

68% vol. (136 proof), 375 ml and 750 ml bottles Walton Waters pays homage to the Catskills' vibrant meadows and rivers. Herbaceous notes shine through a medium body with an opalescent haze and a smooth lemony finish.

Blues Cat

68% vol. (136 proof), 750 ml bottle Blues Cat evokes the creative spirit of the great Cubist painters who roamed the cafes and bars of Paris. Very surprising and earthy notes; a balance of earthy roots and spices, blended with a lively botanical blend. Blues Cat was created in September 2011 by four friends – Cheryl Lins, Eric Pryzgocki, Kirk Burkett and Kenneth (Artemis) Rogers.

Delaware Phoenix offers an online shop and has partner shops, bars and restaurants in the Catskills, Hudson Valley and NYC. In addition to direct sales through the shop, the absinthe is available through a network of retailers and wholesale customers.

Filosofi

We are a farm distillery that grows our own botanicals and locally sources or harvests all remaining ingredients (except fennel and anise). Our production process celebrates the botanical heritage and sustainability, including the use of draft animal power in the garden and the artisanal finishing of the distillation, coloring, bottling, and labeling processes. The color is natural and no chemical stabilizers are used. The propagation of Cheryl Lins’ heritage lives on through Meadow of Love and Walton Waters and the continued production, which began in July 2023, without her presence but with her vision intact.
