Distillation takes place at a state-of-the-art facility with a 350 L Carl still; the Carl family is described as having existed since 1869 and provides precision-cast components for high-precision work. Copper plays a central role in heat transfer and interaction with sulfur compounds, giving the spirits depth and complexity. Taglines such as “grain to glass” and the use of local grains emphasize the focus on regional quality. The Tasting Room & Spirits in State College is open Monday–Saturday 11:00–21:00 and Sunday 10:00–14:00; the Penns Valley tasting room has different hours (Tuesday 16:00–21:00; Wednesday–Friday 14:00–21:00; Saturday 12:00–21:00; Sunday 12:00–19:00). The restaurant’s meals are available Monday–Thursday 16:00–21:00, Friday 16:00–22:00, and Sunday brunch 10:00–14:00.
