Baltimore Spirits Company
A Brief Overview of the Distillery
Baltimore Spirits Company is a craft distillery in Baltimore that works with copper pot stills and open-top wooden fermentation, combined with geothermal cooling. The facility produces rye whiskey, designer gins, and a range of apple brandies, and runs a bottle shop and tasting room where all bottles are sold directly from the producer. The distillery is known for Epoch Straight Rye Whiskey and for an experimental approach to limited editions.
Raw Materials and Production
The core of the production is based on copper pot distillation and open-top wooden fermentation. The distillery describes the use of copper pot stills for their spirits and simultaneously mentions geothermal cooling as a technical element of the facility. Rye is documented as a grain in at least one of their whisky types (Epoch Straight Rye). In addition to whisky, designer gin and various apple brandies are produced within the same production framework. The workflow is handcrafted, with small-batch productions and space for experiments and one-off projects as an integrated part of the production.
Maturation and Barrel Types
The distillery’s aging practices show a willingness to experiment, including the use of a solera system in their apple brandies. Solera-style construction is explicitly used for Solera Apple Brandy, and the distillery also offers variations such as a mezcal-inspired smoked apple brandy. This approach to ongoing blending and varying aging methods reflects an interest in exploring how different systems and aging techniques affect the final spirits.
Whiskies
The portfolio covers several spirit categories with Epoch Straight Rye Whiskey as a central whiskey element. Alongside the rye whiskey, Shot Tower Gin and other designer gins are produced, as well as a range of apple brandies and liqueurs, such as 1904 Apple Brandy Liqueur, Green is Gold Apple Brandy, and Solera Apple Brandy. The distillery also presents special projects and experimental series under names such as Baltamaro, New World Amari, Fumus Pumila, Asimina Pumila, The Rare Expression, and E.B. Smith’s Singularities. Sales occur primarily through the bottle shop and tastings on-site.
