History

In the Beginning

As with any good story (or whiskey), it all began with beer. Tommy Erwin and Ty Phelps met while working at Real Ale Brewing Company. It didn’t take long for their friendship to form, and after several years, where Tommy led the lab as a microbiologist and Ty brewed as head brewer, the two friends decided to take the plunge and open their own place – a whiskey distillery. With their combined backgrounds in brewing, chemistry, biology, culinary arts, and restaurant management, Tommy and Ty leaped into the world of whiskey.

Origin of the Name

While brainstorming possible names for the distillery, they came across old papers showing that the area where they were building had once been called Andalusia Ranches. The name struck them immediately. The rolling hills of the Texas Hill Country remind of the southern region in Spain known as Andalucia. Andalusia Whiskey Company was born.

Production

Grain to Glass

Andalusia Whiskey Co produces fine handcrafted whiskeys in the Texas Hill Country – a setting that evokes the hills of the beautiful Andalusia in Spain. Each whiskey is described as grain to glass: we start with a mash of the finest American-grown malted grain, and then continue production in Blanco, Texas, where each is distilled in our handmade copper pot stills. Grain to Glass Texas Whisky & Spirits – Texas whiskey and spirits, all made from grain to glass in Blanco, TX.

Philosophy

We follow a grain-to-glass approach and distill in copper pot stills. Our products come from Blanco, Texas, and the name and setting draw on Andalusia Ranches and the warm landscapes of the Andalusia region. Our team comes from backgrounds in brewing, chemistry, biology, culinary arts, and restaurant management—and that underpins our approach to craft and quality.
