ÆppelTreow Winery & Distillery describes itself as 'Apple True' – Old English for Apple Tree or Apple Truth. They highlight three generations by hand from branch to bottle, and that history and tradition are their inspiration. They are cidermakers, and apples and pears are at the core of their products. They are orchardists, and honest flavor experiences come from trees and the land. They use a pre-Prohibition meaning of 'cider', so their products refer to fermented or 'hard' cider, and perry is the pear analogue to cider. They produce a range of styles: sparkling, on-tap/draft, still/table and fortified/dessert, and within a style they lean toward dryness – but also have some semi-sweet offerings. They also describe themselves as a distillery, using Wisconsin-grown ingredients and wood to make whiskey and brandies. Their philosophy includes respect for the land, local ingredients and customers as well as a focus on multiple cultivars and historical references.
