Production / Manufacturing
Mashing & Fermentation
Mash starts in a 3,000-liter tank with non-GMO heirloom Baby Jane corn, malted rye, and malted barley. The yeast is added, and the mash ferments.
Distillation
Each fermentation is distilled in 1,000-liter batches by transferring to the pot, where steam is applied, and the alcohol is refined from low to high proof through the columns.
Barreling
The distillation cuts are gathered and bottled into hydrated 53-gallon New American Oak-charred wooden casks, which are aged in the rickhouse until they are ready to be proofed and bottled.
Blending
Widow Jane 10 Year Bourbon is a blend of the finest barrels from Kentucky, Tennessee and Indiana. The series is produced in Brooklyn in small five-batch lots, where the richest and rarest straight bourbons meet.
Proofing & Bottling
The whiskey is non-chill-filtered and is proofed with mineral water from the Rosendale mines in NY to give an intense and complex experience. Each bottle is hand-numbered and labeled before dispatch.

The Vaults
The Vaults is a low-volume, high-age bourbon (minimum 15 years) finished in Mythological Oak from the ancient coastal forests of Greece. The 2025 edition is blended from long-aged casks and bottled at 99 proof and finished with Rosendale mineral water. A special edition where the finish and wood types play a significant role in the complexity.
