Historie
Watercure Farm Distillery opened on September 29, 2019 and was built as an exemplary distillery at the former Gwyn Careg driveway on Route 44 in Pomfret Center, CT. According to the information, it was Connecticut's first Farm Distillery (repealed in 2020), and the aim has been to use locally sourced ingredients to produce unique, locally handmade spirits. The property, which provides direct access to Airline Trail State Park, has a rich history and a connection to the area. The water used is described as part of the local quality, and corn and apples from CT farms are included in the production. 1686 is the distillery's flagship bourbon and honors the date when the ancestors first came to Pomfret. In addition to production, the site features a post- and beam-distillery and a tasting room where guests can experience the spirits. There is an emphasis on growing and using their own ingredients as well as forming relationships with CT's farming community to source corn, malts and apples for the productions. The brand also highlights that they produce some of the finest spirits by using their own water and Connecticut-grown ingredients.

Spirits are distilled from local crops. We use our own farm and collaborate with other local farms to deliver truly unique, locally sourced handcrafted spirits. The distillery also offers indoor and outdoor service with flights and cocktails made from our own spirits, as well as Connecticut-malted beer and wine. The water and ingredients from CT play a central role in the production, and the work of sourcing corn, malts and apples from CT farms supports the local approach.
Produkter / Whisky-serien
Spirits available include, among others, Corn Whiskey and Connecticut Wheat Bourbon Whiskey, as well as Barrel-Aged Connecticut Corn Whiskey and 1686 — the flagship bourbon that honors the arrival of their ancestors to Pomfret. There are also a range of vodkas and other beverages, but the focus here is on spirits made from Connecticut-grown ingredients and grains, including especially the aforementioned whiskey varieties.
Besøg / Oplevelser
The distillery is open with hours: closed Monday–Thursday; Friday and Saturday 10–18; Sunday 11–17. They offer indoor and outdoor service with flights and cocktails made from their own spirits, as well as Connecticut beers and wines, and food is served daily (with the option to bring in outside food). Visitors can visit and purchase products on-site, as well as enjoy tastings and bar experiences in the tasting room area.
