History

  • Up North Distillery was founded in 2015 in Post Falls, Idaho. Distiller Randy Mann took an advanced distilling course and began with his wife Hilary Mann to create a spirits brand.
  • Located in the mountain valley in Post Falls, they have a wealth of locally produced agricultural products at hand and some of the cleanest water in North America. They work with a farm-to-flask philosophy by using honey, grains and fruits from the area to create unique craft spirits and flavors that reflect the Inland Northwest terroir.
  • They describe themselves as a true craft distillery, producing small batches and handmade spirits of high quality. Since 2015 they have released award-winning spirits that echo Inland Northwest magic.
  • In addition to the distillery they also run The Bee's Knees Whiskey Bar and offer private events and bar services such as private cocktail classes, private tastings, group tours and corporate events. They also offer to create cocktails and bartenders at events.

Production

  • Production takes place in small batches in copper pot stills and focuses on using 100% honey in the mash for honey spirits, which yields a clean, not-sweet spirit (honey-based spirits distilled from 100% Idaho honey).
  • Honey spirits are 40% ABV (80 proof) and distilled from 100% Idaho honey; they are described as not sweet, but full of flavor.
  • Barrel Finished Honey Spirits are also 40% ABV and aged in American oak barrels, which adds oak- and vanilla-notes.
  • Barrel Reserve Honey Spirits is a single-barrel edition, aged in new charred Kentucky Oak bourbon barrels, also 40% ABV.
  • North Idaho Single Malt Whiskey is aged at least two years in American oak barrels from Kentucky; 43% ABV (86 proof).
  • In addition to honey spirits and single malt there are also products such as Apple Brandy (and Barrel Aged Apple Brandy), Big Kid Cider and North Idaho Pine Liqueur (limited edition).

Whiskey Series

  • North Idaho Single Malt Whiskey – a 43% ABV single malt, aged at least two years in Kentucky oak barrels; an expression that reflects the North Idaho terroir.

Visit / Experiences

  • Distillery tours by appointment, and there is a cocktail bar inside the distillery with seasonal cocktails and flights of spirits.
  • Visitors can experience private events, cocktail classes and private tastings; group tours and private cocktail service are also offered as needed.
