History

Taconic Distillery was founded in 2014 and is located in the Hudson Valley in New York. They craft their award-winning bourbon and rye whiskies in small batches using corn grown in New York as well as naturally sourced water from their own farm. Inspiration comes from hunting and fishing, and the outdoors lifestyle is reflected in all their spirits. They are proud members of the American Distilling Institute, American Craft Spirits Association and the New York Distillers Guild. Awards: Official Bourbon of CIA Beefsteak; Best Bourbon by Maxim Magazine; Best Bourbon by Hudson Valley Magazine.

Production and Style

The whiskey is distilled at under 160 proof to preserve more of the grain's flavor. They do not chill-filter, so the whiskey may appear slightly hazy at times, which is a sign that much of the flavor is preserved. Aging occurs in cycles: on warm days the spirit expands through the wood and into the underlying wood, and on cool nights the liquid recedes and carries the flavorful compounds back into the liquid again. The char layer acts to trap or mellow undesirable compounds and render them harmless or flavorful. Taconic produces bourbon and rye whiskies in small batches and uses corn grown in NY and naturally sourced water from their farm.

Philosophy

To preserve the full flavor of our whiskey, we do not chill-filter. The whiskey is distilled at under 160 proof to preserve the flavor and aroma of the grain. Aging occurs in cycles, where the wood and unwanted compounds contribute flavor and help round off any undesirable compounds. In addition to whiskey, the passion for the outdoors—hunting and fishing—is a continuing source of inspiration. Taconic is a member of ADI, ACSA and the New York Distillers Guild.
