Overview of the Distillery

Shelter Distilling blends restaurants, bars, and distillation in Mammoth Lakes, Montrose, and Dana Point. The concept is 'ingredients first': local grain varieties, California agave, and snowmelt water form the foundation for a range of American Single Malt, blue corn bourbons, peated expressions, and experimental limited releases, which are served in cocktails and sold from the webshop and locations.

Raw materials and production

Production is based on regional raw materials and a blend of modern control and traditional techniques. Malt and grain primarily come from Colorado and California; some variants use peated malt. Fermentation is controlled either in closed, temperature-controlled cylindroconical tanks or in open, flat-bottom mixer tanks with controlled temperature and occasional malolactic formation. Distillation is predominantly carried out as a double pot still, while some spirits combine pot distillation with a 15-plate copper column. The water is sourced from alpine snowmelt sources such as Eastern Sierra and Montrose Blue Mesa. Filtration techniques include slow-proofing to specified proof levels and hot filtration through coarsely woven cloth to preserve mouthfeel and texture.

Aging and barrel types

Aging takes place primarily in American oak barrels with char levels around 3–4. American Single Malt includes an extra step with a 24-hour soak on Hungarian oak chips before barrel aging, while several bourbon expressions are aged in char 4 barrels and selected as single-barrel or small blends. Archived series and limited releases show that the distillery experiments with different finishes and selections of special barrels.

Whiskies

The core of the range consists of an American Single Malt, blue corn bourbons in small batches and single-barrel editions, a Ridge Runner single-barrel bourbon, and the peated Embers Peated. In addition to these ongoing releases, there is an archive of previous limited releases and experiments, including rye, wheat, and cask-finished variants. The bottles are sold both via the locations’ bars/restaurants and through the online shop.

The whiskies' style and flavor profile

Three throughlines recur across several expressions: vanilla and coconut from American oak, bakery-like sweetness notes (e.g., 'birthday cake' and maple) in blue corn bourbons, and pronounced smoke in Embers Peated Whiskey. Additionally, stone fruit and spices are noted in American Single Malt and several bourbons, giving a range from sweeter grain character to dry, spicy, and smoky expressions.

Visiting the distillery

Shelter runs restaurants and bars in Mammoth Lakes, Montrose, and Dana Point where you can eat, enjoy cocktails, and participate in local tastings. The venues function as both restaurants and outlets for the distillery’s bottles, and their spirits are actively featured in the bars' selections and cocktails.
