Annandale Distillery is located in Annan in Dumfries and Galloway, and is a Scottish single malt distillery with an unusually clear signature: here the whisky is matured and bottled one cask at a time. The distillery works with both unpeated and peated styles and combines a historic facility from 1836 with a modern restart under Professor David Thomson and Teresa Church.

History

Annandale was built between 1830 and 1836 by George Donald and established as one of Scotland’s early legal whisky distilleries in 1836. The first period was characterized by peated whisky produced using traditional techniques and a lot of manual labor. After George Donald’s death in 1883, John Sykes Gardner took over and modernized the site, before Johnnie Walker and Sons bought the distillery in 1893 and used Annandale’s peated whisky in blended whiskies. During the same period, the iconic Charles Doig pagoda, the tall brick chimney, and the warehouses for maturation were expanded. Production ceased after the First World War and remained dormant for many decades. In 2007, Professor David Thomson and Teresa Church purchased the site and set in motion an extensive restoration. Dr. Jim Swan designed the new production facility in 2008, and in 2009 both building repairs and archaeological investigations followed. On 9 November 2014, the first spirit arrived after the restart, and in 2015 the visitor centre reopened. The first bottling came in 2018, after at least three years of maturation in oak casks, and in 2024 the distillery marked ten years since production began.

Raw materials and production

Annandale’s production is built around a clear idea of single-cask individuality. The distillery uses malt from Crisp, one of the oldest malt suppliers in the UK, and works with both peated and unpeated spirit. The modern process has been developed by Dr. Jim Swan and is based on two copper spirit stills, which are designed to remove most of the unwanted sulphur compounds during distillation. The distillery highlights that this special process produces a spirit that matures well and reaches a high degree of maturity already after three years. The historic bonded warehouse also plays a role, because the microclimate there is described as particularly favorable. At the same time, Annandale is consistent in its single-cask mindset: the whisky is never vatted, and each cask is treated as its own individual bottling. Casks are hand-picked from different places around the world to highlight the character in the peated and unpeated malts.

Maturation and cask types

Maturation takes place in oak casks and in a historic bonded warehouse with a microclimate that the distillery considers particularly beneficial. Annandale works with single casks rather than blending multiple casks together, and that makes each expression unique. The distillery also describes a practice where casks are hand-picked from across the world to support the character of the whisky. The first bottling came after at least three years of maturation, which marks the fact that here they trust a relatively early—yet carefully controlled—maturity rather than long aging as the only quality marker.

Whiskies

The core range consists of two distinct expressions. Man O’Words is the unpeated single malt, inspired by Robert Burns and described as smooth and mellow. Man O’Sword is the peated single malt, named after Robert the Bruce and described as smoulderingly smoky. Both bottles are rooted in the distillery’s single-cask philosophy, so the range is not about broad volume, but about clearly defined expressions and differences between each individual cask. Alongside this, the distillery also offers private casks and a range of whisky-related categories, but the two named single malts are the central expressions in the house’s whisky story.

Style and tasting profile of the whiskies

The overall style has two faces. Man O’Words points in a soft and mature direction with a smooth and mellow character, while Man O’Sword leans toward a distinct smoky profile with smoulderingly smoky depth. At the same time, the distillery’s focus on carefully selected single casks and the special distillation process is geared toward a whisky with clear cask influence and a clean spirit profile rather than heavy masking. That results in a style where softness of malt, smoke, and oak each work at their own end of the spectrum.

Annandale can be visited, and the distillery offers guided tours with tastings along the way. The visit can be rounded off at Maltings Coffee Shop, and there is also the option for venue hire for birthdays, intimate weddings, and larger corporate events.
