Quincy Street Distillery grew out of a commitment to craft distilling and an appreciation of Riverside, Illinois’ historical heritage. The family around the distillery describes it as a core value to use classic recipes alongside innovative flavor profiles, and to be a historic storefront in the heart of Riverside. They highlight the commitment to small-batch craftsmanship and collaboration with local artists and suppliers to create spirits with regional character and a sense of responsible enjoyment.

Quincy Street Distillery shares notable hallmarks across their products, where base spirits often rely on a high corn content and a balance of malted barley and rye malts, along with traditional copper still distillation. - Mash bills and generation-specific approaches: For example Bourbon Spring® and other products with 83% corn in the mash bill, supplemented by malted barley and rye malts; this involves a two-stage distillation process in copper pot stills followed by resting, after which the spirits are aged in small, new, lacquered oak barrels (often 3–5 months in 10-gallon Honey Comb vessels for Bourbon Spring®). - Production variations: Laughton Bros.™ bourbon uses 53-gallon new, medium-char oak barrels and is aged for at least two years. The mash bill is also 83% corn with the remainder from malted barley and rye malts and is distilled on a grain still in copper. Old No. 176™ (Railroad Gin) is based on the same corn mash but with a gin botanical mix and single distillation in a copper still; the Barrel Reserve edition ages gin in used barrels from Bourbon Spring to add color and flavor. - Specific products in the whiskey/grain family: Water Tower White Lightning™ (unaged corn whiskey), Salt Creek Corn Whiskey (aged corn whiskey), Bourbon Spring® (young, rested Illinois bourbon), Laughton Bros.™ (Illinois straight bourbon), and North American Steamship Rye™ (bottled-in-bond rye, 4 years in new charred barrels; also a 2-year straight variant). - Production philosophy: The distillery claims a balance between a creative approach and traditional methods, and emphasizes regionally available ingredients and small batches with handcrafted character.
