History

Preservation Distillery is Bardstown's hidden gem and the smallest distillery. The family behind the estate along the Bourbon Trail is located in the official "Bourbon Capital of the World". They pot-distill in micro-batches of 1–3 barrels and have a strong focus on both exceptional whiskey and sustainability. They are proud to be the first and only 100% pot-distilled producer in Nelson County, often referred to as Kentucky’s "Napa Valley" for Bourbon.

The history also describes their connection to the area's bourbon heritage: In 1776 Wattie Boone was one of the first documented bourbon producers in the area, and on the Ritchie Farm by the Beech Fork River Boone laid the foundation for Kentucky’s whiskey heritage. The modern Preservation follows this heritage at the historic estate and carries on the craft with small batches and pot-distillation.

Production

Micro-batches of 1–3 barrels and pot-distillation in Bardstown, Kentucky. With a vision to create a sustainable farm, where whiskeys are distilled in old-school fashion, and a deliberate maturation requires at least 6–7 years of slow aging. From slow distillation to consciously long aging, each batch is supervised by Master of Maturation to ensure the highest standards. After more than seven years of patience, the first estate pot-distilled production is finally ready, and they hand-select limited quantities of Kentucky Pot Distilled Estate Bourbon and Rye under the Preservation name.

Products/Whisky Series

Preservation produces premium small-batch whiskey based on pot-distillation and 100% Kentucky bourbon. Their range includes Estate Wheated Pot Distilled Kentucky Bourbon (1–3 Barrel Micro Batches, low barrel entry proof, cask strength, unfiltered), Old Man Winter Bourbon (6–9 years), Wattie Boone-based bourbons and Very Olde St. Nick (VOSN) with several Limited Editions.
