History

Pauley Hollow Distillery, LLC is the first legal distillery in Pike County, Kentucky. We are a small family-owned operation located in Forest Hills, Kentucky. Our CEO and COO are involved in all aspects of the process, from selecting and milling grain to mashing, distilling, and bottling.

Production & Manufacturing

We use only local water sources and filter through a micron filter, and the distillery has a 100-year-old hand-carved well on the property. We hand-select our grains and use only ingredients that meet our high standards. Fermentation takes place in 300-gallon Cypress wood fermenters. Our distillation equipment includes a copper 150-gallon pot still with a 12-inch neck and four 6-inch columns with copper plates. It is gas-fired with a 440,000 BTU burner. For aging we use new charred and toasted barrels made from Appalachian Oak for aging bourbon, rye, and apple brandy. The barrels impart flavors of vanilla, caramel, toffee, smoke, coffee and chocolate in the various batches. Our Original Recipe Moonshine is a three-grain distillate, distilled three times and charcoal-filtered to remove impurities and provide a smooth aroma and flavor. Fuel of the Feud Moonshine is produced with water from the Randall McCoy Well and a blend of West Virginia corn and Kentucky rye, triple distillation, charcoal filtration, and finished at 100 proof.

Products / Whiskey Series

Robert's Reserve Kentucky Straight Bourbon Whiskey: a premium four-grain Kentucky Straight Bourbon, aged 4 years in small batches. Original Recipe Moonshine: a three-grain distillate, 750 ml, triple distillation and charcoal filtration, available in Kentucky and West Virginia. Fuel of the Feud Moonshine: water from the Randall McCoy Well; corn from WV and rye from KY; triple distillation, charcoal filtration and finished at 100 proof; available in KY and WV. Papa Nick's Appalachian Apple Brandy: Limited Release Apple Brandy, made from apples grown on the distillery's farm as well as other plantations in Eastern Kentucky and aged 5 years in Chardonnay barrels and finished in French oak. Poppy Collins Rum Cask Rye Whiskey: Straight Rye, finished in dark-char rum casks, in small batches, copper pot-distilled. Poplar Haven Apple Brandy Barrel Finished Bourbon: about 6.5-year-old wheated Kentucky Straight Bourbon finished in apple brandy barrels for 10 months. Think caramel and oak with a light apple finish.

Tours & Experiences

We are part of the Moonshine Trail and offer tours and tasting experiences in our Farmhouse Tasting Room. Duration about 1 hour 30 minutes, price $15 per person. Booking is available via our website.

We place emphasis on quality ingredients and hard work. We use only local source water, and our CEO/COO are involved in the entire process from raw materials to bottle. We emphasize legal production and safety, and our products tell stories about Kentucky and Appalachian culture.
